Sweet Potato Fries

- 1 Yam or Sweet Potato
- Non stick cooking spray
- Salt
- Curry
Not sure if this is a snack but I cut it into thick slices, usually about 6. Spray with a little pam on both sides, sprinkle with salt and curry and bake at 375 for about 40 min. MMmm MMmmm perfect autumn snack, good at room temp too, so bake ahead!
If you like a crunchier fry turn up the heat to about 400-425 or put them under the broiler.

I tried these today. I left off the curry because I am not a big fan of curry. They came out great. I have a new side dish to add to my meal planning. Thanks.

I just count the points for the potato. I believe a regular size yam is 3 points. So if you use one then the batch would be 3 points.
I have been a "lurker" on your blog for the past several months, since giving birth to my second child in May. I am NOT a cook so this was your first recipe I've tried - and LOVED it! It's inspired me to play around with some sort of spinach pizza for dinner tonight... maybe the kitchen isn't so scary after all :)
