Vegetarian Chili over Spaghetti Squash

This was an impromptu recipe. I was in a chili mood. Have fun and customize it, use your favorite beans, add some yellow squash, throw in some leftover meat, there are a ton of things you can do with it.

- 1 whole spaghetti squash
- 1 bell pepper diced
- 1 small sweet onion diced
- 1 medium zucchini diced
- 2-3 cloves of garlic chopped
- Chili powder
- Cumin
- Onion powder
- Garlic powder
- Black pepper
- 1 can of black beans
- 1 can of kidney beans
- 1 can of diced tomatoes with green chilies
- 1 small can of tomato paste
Pierce the skin of the spaghetti squash and microwave 10-12 minute (about 6 minutes a pound). Once finished (the skin will be tender to the touch) let it sit while you prepare the chili.
Spray a medium saucepan with olive oil and sauté the onion, peppers, zucchini, and garlic over medium heat until tender. After about 5 minutes sprinkle in the chili powder, cumin, onion powder, garlic powder, black pepper. Stir and cook for a few more minutes.
Add all the canned goods without draining. Stir, bring to a boil and then simmer until you are ready to eat.
Now return to the spaghetti squash. Cut it in half long ways. Scoop out the seeds then scrap out the squash long ways with a fork.
Add spaghetti squash to a bowl and top with chili, that’s it!
Now for the points, this one is stumping me a bit because of the beans and the fiber cap. If there are any point gurus out there I would love your input. I’m estimating 3-4 points a serving for 5 servings.

Roni,
I know what you mean about spaghetti squash - I like it alot lately. I made the squash with chili topping recipe you posted. Then we had the leftovers over ww rotini pasta a couple of days later. We really like it. I bought another sp. squash today too. Thanks for your recipes!

That’s tough, I don’t measure anything. This is why I call them “ideas” instead of recipes” I sprinkle, smell, and taste. I know not very scientific but go with your gut.

I myself didn’t make it my sister did and it was excellent!!! She did such a good job on it!! She also made the zuccini pizza’s too they were great as well. I guess if i keep going over to her house for snacks and dinner i will be losing too!!! Great ideas!

I finally tried the Vegetarian Chili. LOVED IT. (added some chicken breast and corn to the leftovers the next day) Looking forward to the vegetarian Lasagna. Also, really enjoyed the spagetti squash. Added a little (I cant beleive its not butter, light, salt and pepper and it was a real hit. I do not follow the weight watchers program but I do love trying new foods and like to keep it healthy. I love your ideas and look forward to trying more… Thank you for the time and effort you put into your site. I really enjoy reading it daily. Keeps me motivated and inspired. Awesome job…….

Vegetarian Chili… Also, Kid approved. My 5 year old loved it… However she had it over white corn tortilla chips. :-) Thanks again!
