Baked Zucchini Fries

- 1 large zucchini cut into large fry like pieces
- ½ cup of fiber one or all bran cereal ground up in food processor (I measure the ½ cup and then grind)
- ¼ cup of Parmesan Cheese
- Garlic Powder
- Italian Seasoning (basil, oregano, parsley)
- Salt and Pepper
- Non-stick cooking spray
Preheat oven to 350 degrees. Combine the cereal, cheese and spices in a large plastic bag. Dip the zucchini slices in the beaten egg (you could probably use just the white) and drop in the bag. Shake to coat.
Spray a foiled line cookie sheet with non-stick cooking spray and place the coated zucchini. Spray the tops with a little more coking spray. Bake for about 20 minutes flipping once. Cook a little longer If you like them more done, but I prefer mine a little firm.
Updated cooking variation:I tried to broil them to get a crunchier crust and they came out just as good in half the time. Preheat the broiler and place the zucchini 2 racks from the top. Broil for 3-4 minutes then flip and broil for 3-4 more.
No IDEA on the points! I didn’t use all the coating mixture but the cheese alone is about 2 points. So I’d say three for the whole batch. Thoughts?

These look great! I think I will try them this weekend. My Husband LOVES deep fried zucchini so this may be a great alternative!

Roni, I got greedy and tried to stretch this recipe and used two zuccini. I used egg whites instead of the whole egg, and that worked out well, but by the time I was dipping the second zuccini in the crumbs theywere pretty sticky from the first batch of zuccini. So the last several slices I ended up kind of patting the crumbs on the zuccini. They turned out really great and my husband loved them. But two zuccini’s were really too much for a singel serving, so we ended up not finishing our salmon.
P.S. A great quick recipe for salmon is to cook it about 20 minutes in the oven with whatever seasoning you like, and then mix 1/4 cup rinsed black beans and 1/4 cup salsa together to use as a topping when the salmon comes out of the oven. It’s about 5 points, depending on the size of the salmon, and very filling.
Anyway, I love your site, it keeps me going. I’m losing very slowly, but steadily. I use a lot of your tips (count fruit as 1 pt, set mini goals, don’t beat yourself up if you go wild one day, don’t get too crazy about figuring out the points of something, in the end a rough estimate will probably work out fine).
I for one would sure pay a little moola for a monthly or quarterly newsletter from you. Your recipes alone are all keepers. Plus you are pretty funny. I love that. I’m sure keeping up this site is a lot of work, and it would be great if you could get compensated somehow for the great service you provide.

I just made these, but used Total instead of all bran because that is all I had. They were tasty!! Even my husband who does not eat veggies thought they were okay because they weren’t mushy at all. I have some extra for a snack tomorrow. Thanks Roni!!

I made these with parmesan bread crumbs and YUM!!! Then I liked them so much two days later I made them with eggplant. I have found a new comfort food!

I made these, and thought that they tasted much better than they looked! The breading really didn’t stick at all, it was more like a ‘topping’. I think that if I made these again, I’d roll the zucchini in the crumbs on a dish instead of using a bag. But they tasted great!

I just tried these today and loved them and I don’t even really like zuccini.
I used 2 tbsp. of parm from a jar instead of a quarter cup and added some Lawry’s seasoning and chili powder in addition to the Italian seasoning and garlic powder and used Eggbeater eggwhites instead of a whole egg. I think the entire batch of coating was only 1 point maybe 2 and it was enough for 2 small zuccinis and a few pieces of cauliflower and I still had some left over but I was just testing and didn’t have time to make more. SO YUMMY on both. I think this may be my new thing since I love fried veggies. Now I can get in my veggie servings, extra fiber and no frying yet it still tastes so good that it feels a bit like cheating. Thanks for the great recipe and site!

I made these tonight to eat with a Boca burger and they were delicious! I thought they would be good dipped in something so I used one teaspoon of Gourmayo Wasabi Horseradish. It gave them a little kick and only added half a point! I felt like I was eating fried zucchini in a restaurant! Thanks for all the great recipes, I can’t wait to try some of your others!
