Butternut Squash Fries

These were so good, they rival Sweet Potato Fries for me.

- 1 medium butternut squash.
- Non stick cooking spray
Peel the squash with a potato peeler. Cut lengthwise and scrape out seeds. Cut into fry shapes and bake on a cookie sheet sprayed with non-stick cooking spray in a preheated 425-degree oven for about 35 minutes. I flipped them once.
You can add salt and spices but honestly, I forgot the salt and they didn’t even need it! Crunchy on the outside, soft in the middle, sweet and delicious!
As for the points, they are super low. A 1 cup seving (about 205 g) is about 90 cals, 4 grams of fiber with no fat. Thats 1 point! Oh! and the toddler LOVED them. ;)

I loved the fries. they’re fabulous. Is there an easy way to peel a butternut squash? Clearly I’m not much of a cook, and used a potato peeler and it took forever. On the other hand, I burned up a lot of physical calories before I was able to eat the fries! Vicki

Vicki - That’s what I used. I don’t know of another way. Maybe someone else out there does??? HELP… anyone?? :)

I loved these. I had them with the Turkey and Black Bean Chili. It worked great together. Though I have to admit, I love the Sweet Potato Fries more. But it is one I will definately keep. Have you tried either with Chinese Five Spice Powder. Wow - that’s great!

These were amazing. The hardest part was cutting up the squash! I put them in a ziplock bag, sprayed into the bag and added my spices and shook to coat. Did that in the afternoon so they were ready to be cooked later. YUM!!!

Had the munchies tonight and tried these. Absolutely wonderful! Really took care of my munchie fit. I read on some other website tonight that if you pierce the squash with a fork and put it in the microwave for 60 seconds it will be easier to cut up. Also just wanted to say that I love your website and all the great ideas and recipes. Thanks so much for making my journey a lot easier!

These are the BEST! They taste JUST like sweet potato fries. Thank you so much for the recipe! I ate them with fat free honey mustard dressing and that was all I needed to satisfy my snack craving!

If you cut the squash in half (the short length) then it will sit up nice on the cutting board so you can slice off the peel from top to bottom.

Tried these last night but modified a little. Put a little olive oil, cayanne pepper and garlic/pepper seasoning into a gallon bag, tossed squash in the bag until well covered and then baked. WONDERFUL. They were so hot and spicy. These will definately be a wonderful alternative to one of my old favs….Jack-in-the-Box curly fries. Thanks for the recipe!

I tried these last weekend. Unfortunately, I was not a big fan. I refused to give up, just like that, so I tried various ways of cooking them, mixing up bake time and heat temps.. I wanted a cruchier outcome. The longer I baked them.. the soggier they became.
::grumble::
So, I forced them on my husband to get his taste bud overview. He thought they tasted a little too much like baked pumkin with salt. :P

@Haxie - LOL I love them! But you are right, sometimes they don’t come out too crunchy. I think it depends how fresh the squash is too. I’ve always been one softer fries which is why I think I like them. Now I even eat them with ketchup!

Made these last weekend - Thank you so much for the recipe. I really hate cooking, but these were so worth the time. I’m thinking about buying a potatoe chip cutter - my Dad had one, but it’s no where to be found anymore. This may cut down on the prep time (did I say I hated cooking).

I finally tried the Butternut Squash...it was fabulous. It was a workout trying to get it peeled and cut. I tossed the bite size chunks with EVOO, splenda brown sugar and cinnamon and then roasted them on my pampered chef stone. They had a fabulous earthy taste and I can't wait to bake up the other half of my squash tonight. Thanks for sharing all of your wonderful tips and recipes and stories.
Thanks for the idea. I tried these recently. They were very good, although they weren't crunchy as they would be if I had made them with a potato. They were pretty soft. I dipped them in ketchup, which made me feel like I was actually eating potato fries! Also, I sprinkled some cinnamon/nutmeg/ginger on some of them and they turned out pretty well.
