Salisbury Steak

This is one of my husband’s favorites even though I “weight watcher-ed” it up!
- 8 oz lean beef
- ½ cup of fiber one or all bran cereal ground up in food processor (I measure the ½ cup and then grind)
- ½ cup quick oats
- 1 egg
- Worcestershire sauce
- Chopped onion
- Garlic powder
- Parsley
- Non-stick cooking spray
- 1 can of French onion soup (I used Progresso French Onion)
Place all in ingredients, except the soup, in a bowl and mix well. I use my hands but it is quit messy. Form the mixture into 4 patties, each a little more then 3 oz each. Brown in a large frying pan sprayed with non-stick cooking spray. Once both sides are browned add the can of soup, and a splash of Worcestershire sauce, lower the heat to simmer and cover. Cook for about 15 minutes.
I’m calculating the points at about 3 points a piece. I hate to ask again but if you have access to the recipe builder that would be great!
Thicken the soup a bit and add a side of whole wheat noodles or mashed potatoes and broccoli for a great meal. Here is how I served it tonight. All for about 7 points!

Hey, Roni. I wasn’t sure how “lean” your ground beef was. With 5%-7% fat, it’s 3 pts/pattie with sauce with 10% fat, it’s 4 pts/pattie and sauce.
HTH!

This sounds awesome! Yet another one of your recipes I will be trying and I am sure to love as will my hubby. One question though…do you thicken the soup up with some oat or wheat flour? I’ve never made anything gravy-like before. Thanks!!!

Amanda-
I thicken with oat flour but you can use wheat flour or corn starch. Just mix a tablespoon or 2 in a little water first to prevent clumping then add to the soup. Bring to a bowl and stir. You should start to see it thickening and then I lower to a simmer. That’s it!

I MADE THIS FOR SUPPER TONIGHT! It was even better than I thought it was going to be! I slightly changed a couple of things… I grated 3 baby carrots into the meat mixture (because that’s how I make my meatloaf) and I added a little green pepper, diced carrots and celery to the soup/gravy. Everyone loved it. Roni, I just have to say, the idea of thickening the french onion soup to use as gravy is genious! I was trying to think of some other ways I could use this idea.
Oh, and btw, do you buy your oat flour, or do you make it?

hello Roni,
I also ran the recipe with the WW builder, but I got 4 points per serving. strange because I put the same ingredients as Liz (only difference, I add the onion). well, it does not matter too much, because the recipe was excellent and well worth the points!

Thanks for the recipe!

This is the second recipe I’ve tried from this website and I’m 2 for 2! This recipe was so good and so easy to make. The only things I changed: I did not put an egg in because I didn’t have one, but it didn’t make a difference at all as I substituted some season sauce instead. Also, I strained the onions out of the soup as I added it and cooked in fresh onion instead. I wish I could have added mushrooms, but my hubby would kill me. Anyway, it was a big hit with him. He doesn’t like to save leftovers, but he was quick to save these leftovers for dinner tomorrow. =) Well done, keep them coming please!

[…] So when Roni at Weightwatchen featured the recipe for her Salisbury Steak, I was intrigued by the meat mixture she put together for it and knew I had to try it and I was pleased with the result. I have tweaked the recipe very little and it is a staple at our house now. I make up two pound batches…enough for two dozen patties at 1-point each…and keep them frozen so I can grab one for lunch, microwave it until it is hot and put it on an Alternative Wheat Bagel or Pita with tomato, onion, and lettuce for a great 2-point sandwich…that is unheard of !!! AMAZING!!!!!! if you are out there reading this..and skeptical about this recipe like i was.. be brave! it is sooo soo sooo good.
I couldn’t believe!
I wouldn’t let my Fiance watch me make it, I was sure he would gag at the thought of me adding cereal and oatmeal to our meat, but we inhaled the meal.
I was amazing… we splurged a little and had mashed potatoes which made it even better!
THANKS RONI!!! You are great..

Roni-
Yum, yum, yum!! Just as others have posted. My hubby is adamant about not eating low-fat meals (he thinks they don’t have as much flavor as the full fat meals!!!) Anyways, he LOVED it, my oldest son had 3 servings and my pickiest eater of all, my 10 year old son ate it all without any complaints!! I served it just as pictured except threw in cauliflower with the broccoli and some shredded cheese on theirs. Oh I did add a little Tony Cachere’s seasoning and more Worstechire than called for. Yum!! And now I feel so good, knowing I just had a WW approved meal that my whole family loved. Thanks Roni!!!

I made this last night. I had a few changes. I used ground turkey instead of ground beef… and I used Total. I needed to double the amount of total to get the mixture to be not as wet as it was. We had baby carrots on the side. I thickened the sauce with corn starch at a boil.. and let me tell you, the sauce is AMAZING!! I am really not a fan of ground anything, so I wasn’t in love with the patty itself.. but my husband said they were good. Now, back to the sauce- AMAZING! I used 2 cans of Campbells French Onion soup. INCREDIBLE. I’d totally make this sauce again over egg noodles!
Hi Roni,
I'm new to WW and was looking for help... I think I've found it with you! Your recipes look amazing.
Quick question, though. I can't have wheat gluten, so bran flakes are out and I see you use them in many recipes. Any ideas about what can I substitute this with and still add so much fiber?
Thanks so much. Looking forward to trying these!
Lorna - I'm not that familiar with gluten free diets but I believe some oat flakes are gluten free. You can try those. I hope that helps!
Thanks, Roni. Will do. That should work.
LORNA! OATS are not gluten free. My son is GF/CF so I have struggled with this as well. Buckwheat is gluten free, white or brown rice flour, tapioca flour, garbonzo flour, potato flour, and maize (corn) flour. You can also buy potato flakes. Perhaps these would work in this recipe. For more information you can check this site or google gluten free and you can find tons of info.
