Crispy Baked Parmesan Crusted Tilapia
Here is my new ‘go to’ when I’m craving fried fish.
- ½ cup Fiber One Cereal (or all bran)
- ¼ Parmesan Cheese
- Italian Seasoning
- Garlic Powder
- Salt & Pepper
- 1 egg beaten in bowl
- Non-stick cooking spray
This would work with any fish. I just happened to have 3 tilapia fillets ready to go.
Place all ingredients Fiber One Cereal, Parmesan Cheese, Italian Seasoning, Garlic Powder, Salt & Pepper in the blender to make the breading. Dip fillets in egg then dip in breading to coat. Spray a cookie sheet with non-stick cooking spray, place fillets on sheet and spray tops with non-stick cooking spray.
I broiled them 2 racks from the top for about 3-4 minutes a side. They came out nice and crunchy. Even hubby liked them!
I easily breaded 3 fillets with this recipe and had about ½ left over. You could probably stretch it to about cover at least 5-6 fillets.

We made this and figured it was 6ish pts. a piece since the pts. are really just in the fish and we added 1 pt. per piece for the crust. My son has been on a meat strike but we still make him take one bite of everything on his plate. he loooooved this and asked for more. We were floored. He ate 1/2 of mine too. This goes into rotation for sure.

This is yummy!! I changed it up a bit and used dover cod, but still so good!! The hubby and dad liked it too!! Thanks for the idea!

@ michele - I would count the fish points and then add one for the “breading”.

Way to go Roni!! We ate the Tilapia tonight… wonderful, tasty, and crunchy! Thanks for a great recipe. I see that there were questions about the Tilapia points. I bought mine frozen. The package said a serving is 4-oz raw, and the filets were individially flash frozen. 4-oz is 100 calories, 0 fiber and 2.5 total fat. With the WW Points finder that calculated to just 2 little points! Even after coating the two filets I cooked, I still had crumbs left over. I also used “egg beaters” because I was out of regular eggs. Also, we ate some “Kimchi” with it. Have you tried it? It comes in a jar in the produce section of WalMart or ShopRite. You can get it medium or hot. My husband and I both figured out that when you eat hot/spicy foods, it makes you feel full longer. That’s just our observation - thought I’d pass it along. Old Bay is a great seasoning blend for all seafood. I have used it on talapia and it’s great. Love your recipe.

I made this last night and it was YUMMY! I used Total instead of All Bran and did it under the broiler. I used two large tilapia fillets and barely had enough breading, though. So next time I will probably a bit more of everything.

I used the Fiber One Cereal and was a bit skeptical at first but it turned out awesome! I used two tilapia filets and used the ingredients suggested and had plenty of breading left over. I will definitely use this recipe again.
