Quick Tortilla Pizza
I make these all the time and I’m tired of typing it over and over again. So here it is, once and for all! ;)
- 1 point tortilla
- 1 tbsp tomato paste
- Garlic Powder
- Onion Powder
- Oregano
- Basil
- Pepper
- Diced peppers
- 4 slices of turkey pepperoni
- 1 oz mozzarella cheese
Preheat oven to 425 degrees. Smear the tomato paste on the tortilla. Sprinkle with spices, add peppers and pepperoni, top with cheese and bake for about 10 minutes.
That’s it! With a 1 point tortilla I count it as 4.
Oh! and if you have a pizza stone they come out super crispy!
UPDATE: if you want a crispier crust, put the tortilla in the preheated oven for a few minutes to get crisp. Remove and add your toppings!

Hi Roni-
I was just wondering what brand of 1 pt tortilla’s you use (besides like the flat out bread)…I thought that I scored big last night with finding 0 pt tortillas BUT I forgot about the fiber cap of 4! HUGE BUMMER!

What a wonderful site you have and I have really been battling all kinds of demons since my Rheumatoid Arthritis has gotten worse and I’ve gotten older. I think I can follow your ideas and it won’t hurt the disease and will keep the weight under control. Thanks for taking the time to share your success with the rest of us and your recipes sound great!

[…] Tonight I experiemented with a low-carb whole wheat tortilla using some inspiration from a recipe Roni posted on her site a while ago. I made a few changes based on what was available in my kitchen, and it was delicious! […]

I have been making a variation of this using ‘Flat Out’ wraps all week. DELICIOUS! The first time, I used turkey pepperoni, diced peppers, and diced tomatoes. But I also like them with just sauce and cheese. The trick is tossing the wrap under the broiler for a few minutes on each side FIRST, otherwise your wrap will be too soft. YUMMY, my new favorite lunch. VERY filling, also. I just use some jarred organic 4-cheese sauce and then 2% mozzarella… I haven’t experimented with adding different spices yet.
Thank you so much for this great site.....you are a life saver.....sincerly Eileen
