Zucchini Pizza Bites

Zucchini Pizza Bites

  • 1 medium zucchini diagonally sliced (on the thicker side)
  • Tomato paste
  • Garlic Powder
  • Onion Powder
  • Basil
  • Black pepper
  • 1.5 oz mozzarella cheese
  • 1 tbsp parmesan cheese
  • 5 slices turkey pepperoni diced in small pieces
  • Non-stick cooking spray

Turn on the broiler on high. Line a cookie sheet with aluminum foil sprayed with non-stick cooking spray.

Mix the mozzarella, parmesan and diced pepperoni in a small bowl.

Slice the zucchini; smear each slice with about a teaspoon of tomato paste and lay on the cookie sheet paste side up. Sprinkle with spices. Top with even amounts of the cheese mixture, pressing lightly to stick to the paste.

But on the top rack in the oven on broil for 2 minutes. The cheese should just start to get “crusty”.

The points really only come from the cheese so for the whole batch I’m estimating 3-4 points. I ended up with 12 in the batch so 2 - 2 point servings sound right. Then again, I ate the whole batch for 4. ;) The picture shows half of them.

Roni,
This sounds really delicious and I’m definately going to try these. I’ve found lots of good ideas for snacks and meals on you website. I’ve noticed that you’re frequently estimating point values for your recipes. Did you know that at weightwatchers.com there is a recipe builder where you can enter your ingredients and it will tell you how many points the recipe has per serving. Its an awesome tool that I’ve found invaluable. Then there is no guesswork. I frequently use it to see what substitutions I might need to make in a recipe to lower its points value by editing the recipes after I have entered them.

These were great. I went right out and bought the ingredients. I used veggie pepperoni and the family had no idea. I LOVE THIS WEBSITE. YOU INSPIRE ME!

DH and I made pita pizzas today. I looked for and found turkey pepperettes (pepperoni) and paid extra to get a brand of mozarella cheese that was 10% less MF. They were great.

I just put it through the reciple builder on WW. With the brands of things I used, it turned out to be 4pts for all 12 of them! Good job on the estimate Roni!
