Grilled Salmon with Lemon and Thyme

- 2 salmon fillets about 4 ounces each
- Juice of one lemon (about 2-3 tbsp)
- Fresh or dried thyme
- Salt & Pepper
- Non-stick cooking spray
Marinate the salmon fillets in the lemon juice and thyme for 1/2 to 1 hour. Sprinkle with salt and pepper and spray with non-stick cooking speay to prevent sticking.
Grill over medium heat for about 3-4 minutes a side. That’s it!
I only counted points for the salmon so about 3 points each??
I served with roasted peppers, onion and some sugar snap peas. All done on the grill using the Vegetable Grill Tricks, a bit of salt and olive oil non-stick spray. Even the husband like this, I almost fainted! ;~)

I really want to like Salmon…I really do b/c of all the health benefits it has, but everytime I have had it, it’s gross. I am going to give it one last shot with this recipe maybe this weekend. Every recipe I have tried of yours is always awesome, so I hope the same for this one. I have total faith in you Roni!! ;)

@Amanda - The secret with Salmon is to not overcook! I still mess up now and then and it comes out dry. If you cook it right it can be ‘delish’!
I hope you like it. This was a simple lemon recipe but salmon is also good with sweet marinades too. Especially honey!

Try steaming salmon in a bamboo steamer for about 4 minutes depending on the thickness of the salmon, bigger pieces take longer obviously. I throw some asparagus tips in at the same time and a drizzle of lemon juice brings out the flavour and helps to cook the salmon on the up side. Delicate flavour and somehow not so oily. Love your recipes btw.

Hey all, I am trying to figure out the points… I looked up salmon in the online points catalog and they range from 7-9 points… is there a special kind you bought Roni? Yours is only 3 points…

@Catherine,
You have to do it by ounce. Salmon is a little more then a point and ounce. So a 3 ounce fillet would be about 4 points. A 5 oz would be 6 and so on. At least that’s how I always calculate it.

I made this tonight and it turned out good!! Hubby ate it and he has NEVER eaten salmon. NEVER!!! The toddler even had a few bites. It wasn’t gross!!! I knew it wouldn’t be, if I cooked it the way you do. It was very juicy and pretty good. I even made the veggies using your vegetable grill tricks and they were was sooo good. I will definitely be doing that again. Thanks for all your wonderful ideas. They inspire me so much and now, thanks to you, DH thinks I am a whiz in the kitchen. ;)
