Roni’s Whole Grain Pancakes

I’ve been experimenting with different pancakes recipes for awhile. I think I FINALLY got it!! They fluffed up, had a hint of spice and were moist. The toddler LOVED them, he’s walking around the house with one right now eating it like a cookie!
They aren’t sweet, then again pancakes shouldn’t be, should they? I loved them with a bit of blueberry preserves and berries on the side. 
- ½ cup quick oats
- 1 cup 1% milk (I’m sure skim would work but tis is what I had)
- 2 tsp lemon juice
- ¾ whole wheat flour
- 1 tbsp splenda
- 1tsp cinnamon
- ½ tsp nutmeg
- ½ tsp baking soda
- ½ tsp baking powder
- 1 egg
- 1 tsp vanilla
- 2 tsp canola oil
In a medium bowl combine oatmeal, milk and lemon juice. Let sit while mixing the dry ingredients (at least 2 minutes).
In a small bowl combine all the dry ingredients, whole wheat flour, splenda, cinnamon, nutmeg, baking powder and baking soda.
Beat the egg, vanilla and oil into the milk/oatmeal mixture. It will be very liquidly.
Add the dry ingredients to the wet and mix with a spoon until combined.
Pour batter in a non-stick skillet or griddle over medium heat to make pancakes. Cook about 1-2 minutes a side, small bubbles will form but not as many in traditional pancakes. I just peaked underneath for a light brown color, then flipped.
I made 7 “cakes” (as my son calls them) but next time I would go a little smaller and make 8-10.
UPDATE: They are great leftover. Keep them in the fridge or freezer and pop them in the microwave for 20 seconds! Oh and also good with applesauce!

1 Tbsp SPLENDA No Calorie Sweetener
1 item egg
2 tsp canola oil
If you use a different milk, the Silk Light is 1 pt per cup.

I ran it through my mastercook software, and divided into 4 servings I got the nutritional information of :
Cal: 188
Fat: 5
Fiber :4
Which comes out to 3 points per serving.
I’ve been make a whole grain version, but I am going to try these too! They look great. Thanks!

When you say “dry oatmeal” did you use rolled oats, quick oats, or instant?

Would the batter work in a waffle iron? My kiddos love waffles, as do I. I love to make up a huge batch and them freeze them.

I made these for breakfast and served with no sugar applesauce and a few raspberries on top…YUMMY, nice and fluffy…what a great recipe! Thanks Roni!

I made these last night for dinner (breakfast for dinner is one of my favorite treats). They were SO yummy! I had bananas laying around too that were about to go bad so I mashed one of them up and threw it in as well. I have a bunch leftover that I froze and can now just pop in the toaster for a quick snack!

I made these for lunch today and I had added about 1 cup of blueberries and 2 smooshed bananas. My batter made 12, a few of which were rather large. We loved them!
Any idea on how many calories?
