Shrimp, Peppers & Potatoes

I know, not a very creative recipe name but that’s what I had and this is what I came up with. :~)
- 1 tbsp olive oil
- 1 thick slice of sweet onion chopped
- 2-3 gloves of garlic minced
- Salt & pepper
- 2 bell peppers cut into strips (preferably 2 different colors)
- Up to a ¼ cup of water
- About 1 tsp each of paprika, garlic powder, onion powder
- About ½ tsp chili powder
- 1 can of whole potatoes sliced
- ½ pound cooked frozen shrimp (cleaned and tails removed)
In a medium frying pan over medium heat, sauté the onion and garlic in the olive oil for a few minutes until onion become transparent and garlic begins to brown. Sprinkle with a bit of salt and pepper. Add the sliced peppers and dry spices. This is where the water comes in. The spices may soak up the remaining oil and the pan may get dry. Add a splash or two of water to loosen it up. Add the potatoes and shrimp (both are already cooked so they just need to get warmed up). Stir until all ingredients are coated with spices and warm. You may have to add another splash of water.
OK, points, “Roni Math” gives me 2 servings 5 points a piece?

Roni: Have been checking out your website for awhile now and think it’s great. I ran the recipe for you and here’s the low down.
Olive oil 3.5 to 4 points
2 bell peppers .5 points
1 can of whole potatoes (I used a 15 oz. can) 4.5 points
shrimp 4.5 points
All other ingredients are 0 points
Total 13 to 13.5 total or 6 to 7 points per serving.
Hope this helps. Also, if the can of potatoes is less than 15 ounces it will obviously reduce the points. Hope this helps you out.

This was absolutely delicious. I just finished my dinner and had to write to you ASAP - and let the dishes wait a few minutes.
I didn’t put in the potatoes, but instead served the peppers and shrimp over rice. And instead of water, I added some diced tomatoes and juice (about 1/2 cup). YUM!!!!!
