Big Simple Chocolate Cupcakes

I made these for the toddler’s 2nd birthday.  They came out better then I expected, moist, yummy and HUGE! Well, huge compared to the normal low point cupcakes I’m used to.  ;~)Big Simple Chocolate Cupcakes

I used sprinkles to decorate some instead of frosting.  This way I save points but they still look festive!

Preheat the oven to 325 degrees

Beat the cake mix, pumpkin and water for about 2-3 minutes.  The batter will seem light and airy.

Spray 2 6-cup muffin pans with non-stick cooking spray. Scoop the batter into the muffin pan and top with sprinkles.  Bake for 35-40 minutes.


I made 12 large cupcakes, just about 4 points a piece.  You could make 24 smaller ones for 2 points if you want but I was into the size this time.

Update: We had them this morning for breakfast and I finally figured out what they taste like! If you ever had a devil dog, they taste just like the chocolate cake part of that!

Hey Roni…on those cupcakes, do you omit both oil and pumpkin in lieu of the pumpkin? Sorry if that seems like a silly question just want to make sure!! Thanks for the inspiration!

@Debbie - I only used what you see listed there. No egg, no oil!

I am SO going to make those today! They look awesome! Oh, I have something cool that will work with these. They are muffin liners, only not the old paper ones. They are made from that silicone, like those flimsy breadpans and such. They are very cool because they are reusable, and you don’t have to spray your tin or worry about a mess.

Hey thanks for the recipe!!! My girls 2nd birthday is June 25th and I have been scrambling around for a recipe that is point friendly. These are perfect… I was drooling just thinking about making them! LOL

I FINALLY made these last night to bring to a friend for her birthday tonight! I made a batch of 18 and they are still HUGE! Very tasty, the fiance says they taste like a Jell-O Pudding Cupcake (that’s a good thing)!

Is the Betty Crocker cake mix that you used to make your cupcakes sugar free? Or do you know of any cake mixes that are or that contain splenda. I would be very intrested in knowing the brands if there are any. Thanks

I made the chocolate w/ sprinkles and fooled all of my nieces and nephews who don't like healthy food. Then I bought a coconut cake mix and made pumpkin coconut muffins and they were to die for!!!

These are unbelievable! This is how I am making all my cupcakes from now on!! I no longer will feel guilty about eating cake! They are the most moist cake I have ever had! No need for icing! I am going out to buy a spice cake mix and will use the rest of the pumpkin up with that. I am thinking pumpkin-spice cupcakes with cream cheese frosting at Thanksiving?!

let me just say, WOW! I made these except with the sugar free classic yellow cake mix (i.e. what was on sale, haha), pumpkin, water, 1/2 tbsp cinnamon and a pinch of nutmeg to kick off full. I put them in mini muffin cups that i found at the crafts store- it made NINETY muffins (coming in at about 25 cals a piece!). Sure, they're tiny, but they're really cute and you don't feel at all bad eating eight of them, haha. Thank you SO much for the idea with the pumpkin, these made perfect 'happy fall!' treats!

I made these last night, and LOVED them. My intention was to hide the pumpkin can from the husband that way he didn't judge them prematurely… and though that didn't work (he found the can) he still really enjoyed the cupcakes. I frosted some with cream cheese frosting, and left the rest naked. They are very tasty and super easy to make. Thanks for the recipe!

Ok, I just made two batches of these.. one with the chocolate cake mix and one with the Betty Crocker butter pecan mix! WOW. Word of advice. Put them in your freezer right away... my fiance and I wanted to devour these! SO DELICIOUS! Thank you Roni!

These are the most awesome chocolate cupcakes I have ever had without icing. I heat mine just a bit then take a scope of no sugar added vanilla icecream. Mmmmm. Just like hot fudge cake without all the guilt. Thanks for sharing!!

Yummmmm! No reason to make cupcakes the regular way again. These turned out awesome! Moist and tasty. Amazing. I did the chocolate and then I tried a spice cake and both were great. I love your recipes!
