Portabella and Cherry stuffed Pork Rolls

I made this recipe the day I found out I lost the site. I’ve been spending so much time recovering old posts I thought it would be important to get something new out there.

All right, on to the food…

This came out SO GOOD! It’s my “fanciest” dish yet AND the Husband actually like it! I got him to eat spinach again and that’s 2 dinners now with fruit he has enjoyed. The other being Grilled Tilapia with Fruit salsa (I’ll post as soon as I can). The picture does not really do it justice. It tasted better then it looks. Portabella and cherry stuffed pork

  • 4-6 3-4 oz boneless pork chops pounded thin
  • 2 cups of baby spinach chopped
  • ½ cup bing cherries cut in half and de-pitted.
  • 1 large Portobello mushroom cap diced
  • 1 tbsp apple cider vinegar
  • 2 mini corn muffins or 1 regular corn muffin crumpled
  • Fresh thyme and rosemary (or about ½-1 tsp of each dried)
  • Non-stick cooking spray

Mix the spinach, cherries, mushrooms, crumpled corn muffins, vinegar, rosemary and thyme in a medium bowl and let it sit for a bit for the flavors to merge. (I made the stuffing ahead and stored in the fridge for a few hours)

Scoop the stuffing mixture on top of the pounded pork and roll. Use a toothpick to hold together if necessary. Place the pork in a baking dish sprayed with nonstick cooking spray. I had more then enough stuffing for 5 chops (that’s why I said 4-6). I sprinkled the extra in the baking dish on top of the chops.

Bake covered in a preheated 375-degree oven for 25-30 minutes until the pork in finished.

I haven’t had time to do the nutritional info yet. I’ll try to get to it when I get back from vacation.

I entered it into the recipe builder using 6 chops and one corn muffin. 4 pts per chop. Yummy! Can't wait to try it.

well it looks pretty darn good so if it tastes better than it looks...whoa, look out!! i think it looks pretty too...festive, like a good holiday meal.

Roni - I made these last week and had enough stuff left to make them again, so I just had to buy more pork. They are delicious. Thank you for all of your creative do-able recipes! I'm not the best cook in the world, but thanks to your recipes, my hubby thinks I am! Ha! Keep up the good work!
