Turkey Loaf with Summer Squash

Is it odd that I was craving meatloaf today? Honestly I can’t remember the last time I ate some so this morning I whipped this up and had it ready to throw in the oven for dinner. It came out better then I expected and both the husband and the toddler liked it. It was a hit!
- 1 lb lean (at least 93%) ground turkey
- 1/2 cup bran flakes
- 1/2 cup Quick oats
- 1 large egg
- 1 packet onion soup mix, dehydrated, dry form
- 1 tbsp dried parsley
- 2 tbsp Worcestershire Sauce (separated)
- 1 tbsp Ketchup
- 3 small-medium summer squash cut in large chunks (I used zucchini and yellow squash)
- 1 small or one thick slice of a large sweet onion cut in chopped
- Non-stick cooking spray
In a medium bowl, combine the ground turkey, onion soup mix, oatmeal, bran flakes, egg, parsley and 1 tbsp of the worcestershire sauce. Form the mixture into a loaf and place in a casserole dish sprayed with non-stick cooking spray. Place the summer squash and onion around the loaf.
Wisk the ketchup and the remaining Worcestershire sauce together and brush on top of the loaf.
I baked the loaf covered with aluminum foil in a preheated 350-degree oven for about 50 minutes. I then removed the foil and turned on the broiler for 5 more minutes.
I did make a dipping sauce out of equal parts ketchup and Worcestershire sauce, it went really well with it. I liked it the husband ate the loaf straight up.
Now for the nutritional info, I’m calculating this at about 6 servings. Each serving with 202 calories, 7g of fat and 3g of fiber. That’s only like 4 points a serving! I don’t know if I miscalculated but it was a nice meal for 4 points! If anyone has some time can you double check it for me?

Hey Roni,
I was looking for a meatloaf recipe to make for visiting family, and low and behold - there you are - providing a great recipe!

What brand of Bran flakes do you use? I checked my cereal aisle, but couldn’t find just plain. Thanks.

@Carolyn - Funny you should ask, I thought of that. I actually used a brand called Millville. It’s only available at Aldi’s, a discount store. It’s kind of like a “no-name” brand. It’s super good if you have an Aldi’s by you, only 1 point for 2/3 of a cup and whole grain.
I have seen these in “regular” stores…

Hi Roni. My friend shared your blog with me a few days ago, and I was immediately drawn to the wonderful-looking meals. I made the zucchini pizza bites a couple of nights ago (which I really liked), but I LOVED the turkey meatloaf. I made it last night, and my friend and I actually licked the bowl! It was soooo delicious. Thank you for the recipe.

Just made this tonight. It was fabulous. And I only had meatloaf a few times in my life, but I went for it. So easy too! I will definitely make this again.

My family really liked the meatloaf. Although, I had to make one change. I didn't have the onion soup mix so I substituted Hidden Valley Ranch dressing mix. It tasted great. Not sure what that does to the points, though. Thanks for all your pointers and recipes. I love your sight.
Roni, let tell you... I made this tastey treat last night and it was such an EASY recipe to make. (Not to mention an ENORMOUS hit with myself and my guy!!). I'm not really a "meatloaf" type of lady, but I thought to myself "why not?". Well, this recipe was so easy and came out beautifully. I don't know how you do it, but keep on doing it girl!!
I made this last night and it was sooo good. My husband loved it! I added the whole wheat orzo instead of the bran flakes and I also added peppers, zucchini, and carrots. It was delish!!
