Orzo with Zucchini and Roasted Peppers
I told you I would go Orzo happy when I found some a couple of days ago. I can’t help it! Its so easy to cook and the whole family loves it!
- 4 oz whole wheat Orzo
- Small can of Tomato Juice
- Thick slice of sweet onion diced
- 2 cloves garlic minced
- Medium zucchini chopped
- About ¼ cup of roasted bell peppers diced (I used the jar kind - make sure it’s not packed in oil which adds more fat) (save a bit of the “juice”)
- Non-stick cooking spray
Cook the pasta according to package. Add the tomato juice to the water for added flavor.
Spray a large non-stick skillet with cooking spray and cook the onion and garlic for a few minutes over medium heat. Add the zucchini and roasted peppers. Splash with a bit of the roasted pepper “juice”.
Drain the pasta and add it to the skillet. Lower the heat to simmer and let the flavors merge for a few minutes until you are ready to serve.
This dish can be used as a meal or a side. I did both, side did for dinner and then lunch the next day. You can get about 6 servings as pictured so I thought I’d no the nutritional information for that (120 calories, 1g fat 5 g of fiber). Just double up for a meal!

I make something similar to this with rice and quinoa, etc. I'm not sure if you are a mushroom fan - but mushrooms go great in this too!
You know I am, but I didn't have any. Good idea!
