Roni’s “They don’t know what’s in there” Pizza Sauce

This worked like a CHARM! My fussy eater niece had three slices and wanted more. Little did she know she was eating zucchini, broccoli AND spinach! ;~)

The Sauce

Roni’s “They don’t know what’s in there” Pizza Sauce - the pizza

  • 1 tbsp olive oil
  • A thick slice of sweet onion diced
  • 3-4 cloves of garlic sliced
  • 1 small-medium head of broccoli cleaned and chopped
  • 1 small to medium zucchini diced small
  • A handful of baby carrots (I used about 10) sliced thin
  • 2 cups of baby spinach chopped
  • 2 small cans of tomato paste
  • About 1 tsp garlic powder
  • About 1 tsp dried oregano
  • About 1 tsp dried basil
  • About 1 tsp onion powder
  • Salt and Pepper
  • Red food coloring (optional)

In a medium to large pot over medium heat add the olive, onion and garlic. Let it sweat while you prepare the rest of the ingredients. Add the broccoli, zucchini, carrots and spinach. Stir and cook for a few minutes.

Add one can of the tomato paste with about 3 cans of water. Stir. Add the spices and stir. Bring to a boil (just a few bubbles) then lower to a simmer. I simmered for at least an hour occasional stirring.

After the simmer, add the sauce with veggies to the blender (you may have to do it in multiple batches. Put the sauce back into pot and add the remaining can of paste. It will bring the color back to a nicer shade of red. the sauce will be super thick, perfect for pizza! Let simmer of low heat until you are ready to use. If you do not think it will fool them, add a drop or two of red food coloring.

I’m also going to try it out on pasta tomorrow and see if I can get them to eat it two days in a row! I’m such a sneaky mom, aren’t I? ;~) Honestly though, it was SUPER good! I really liked it! It had a ton of flavor.

Here is my niece shoving down her THIRD slice! You got three pictures because I just couldn’t decide.

For the pizza. I used trader Joes’ Whole Wheat pizza dough and about 4-5 oz mozzarella cheese. That’s it!

Anyone want to do points for me? The only problem is I have no idea how many servings. I’m thinking not too much on one slice of pizza and I have enough to make at least 4-5 whole pies.

Update

I estimated the nutritional information using nutritiondata.com. I'm also estimating the sauce recipe to end up at about 4 cups and a serving size to be 1/2 cup. That's 8 servings in the recipe. So for each 1/2 cup I'm getting about 80 cals, 2 g of fat and 3 g of fiber.

One more thing... Would a stick blender work okay ? I hate dragging out the big one. Alton Brown made "red sauce" last night ( rerun,of course)and used one of those. :) I'm gonna make a batch to take camping! Maybe pull one over on Dad too!

I use the braun hand blender on mine for this and it works great - just make sure the blender stays IN the sauce - if it comes up to the top, you'll get sprayed!

Gotta tell my daughter with the 5-year old triplets about this one. They are the only kids I've ever heard of who won't eat peanut butter. One likes carbs, one likes meat, and the other one only wants CheeseNips!

If anyone suggests other serving sizes, let me know. I can change it up and see how many points are in one pie then you can figure out how many slices you want to cut yours!

I just made the sauce, and mistakenly left out the broccoli. Well, it turned out great without it! I wouldn't omit again, but if the same mistake happens to you, it'll be fine!

@desertmama - That's for about 1/2 cup of the sauce. I think! It's hard to estimate, size of veggies, how much water used, how many cups total the recipe would make.

I changed the sauce a little (see below)and got a point per (8oz)cup...there was 10.5 cups total.

1 Tbsp olive oil
2 large Vidalia onion(s)
7 clove garlic clove(s)
2 head broccoli
2 medium zucchini

(2) 6 oz canned tomato paste

Hey, just wanted to let you know, that I made my own version of this - just all kinds of random veggies. But I added a can of black beans. Also very good, and a little bit more protein and extra fibre!

Just made this sauce yesterday and placed it into Ziplocs divided for usage. We made our pizza tonight (which was fun!) and my 4 year old loved it! I was shocked at how awesome it was! I ate 3 pieces and was lovin every bite!

I used Bobolini Whole Wheat Thin Crust and the pizza was nice and crispy. I also diced fresh tomatoes onto half of it. Next time I'm thinking about some mushrooms! Or a hawaiian pizza w/ ham & pineapple sounds great too! You are truly gifted Roni and we are all blessed to have you on this journey! Keep them coming!

I tried your recipe and within a few days I had to make a second batch! With a picky 12 year old and even pickier husband (the 2 year old eats better than them!) this worked great, they didn't even know what they were eating since it was put through the blender. I added some cauliflower and a red pepper to it and the second time around I used squash instead of zucchinni. I added V8 juice to the second batch to make it into pasta sauce and that worked well too! It was so good that my picky niece was eating the sauce straight!

Thanks for all your great recipes. My 12 year old likes to look at the pictures and choose some to try. Next week it is the cupcakes!

Hi Roni, Thank you so much for you site, I just love it, great tips and idea's. I'm a 105lb loser with WW, and have kept it off for over 20ys. I still struggle with 25lbs up and down at times.....Right now I am working on 20lbs. Your blog has been such a blessing, it has given me alot of inspiration. Your reciepes are great. I made this today and WOW-- I am really pciky whrn it comes to pasta sauce but I LOVED it!! I added button mushrooms (because I had them) and it was wonderful!! LOVE IT! Thanks Roni!! I used your freezing idea too- flat in bags- and it is working out well for space! Can't say enough about how much I love it - thanks for all your great ideas!! (PS: used a stick blender and it worked well!)

You rock! I made this today for my family and we made pizza together. Each kid gets to 'decorate' a half a pizza (we make 2) and Mr.'I run from green veggies' loved it! I'm so excited. I put it into freezer ziploc bags, a cup per bag. One bag worked perfectly for our 2 pizzas. I still need to find a different pizza dough, mine is 3 points for 1/8 th piece. Anyway, thanks!

Oh yeah I added an extra can of tomato paste. It still smelled too much like broccoli and I knew someone would smell it! It worked great!
