100% Whole Wheat Banana Nut Muffins

I’ve been experimenting with a Banana Nut recipe for awhile. Everything I read says you should mix whole wheat flour with “all purpose”, but I like the challenge of seeing if I can make tasty 100% whole wheat treats. Well, these finally came out good enough to share. Don’t get me wrong the “bad” batches were pretty good too! The toddler is my ultimate taste tester and any time I can get him to eat a whole grain sugar free treat, I know it’s time to post. ;~)
- 1 and ¼ cups (150 grams) of whole wheat flour (I weighed it)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 egg whites
- 1 large overripe banana
- ½ cup plain non-fat yogurt
- 1 tbsp honey
- 1 tbsp molasses
- ¼ cup applesauce
- 1 tsp almond extract
- 1/8 cup (15 grams) of almonds (I used raw)
Preheat the oven to 375 degrees
Put the almonds in a plastic bag and beat with a rolling pin to chop them up. Set aside.
Mix and double sift the whole wheat flour, baking soda, baking powder and salt. Set aside
In a medium bowl mash the banana with a fork. Add the egg whites, yogurt, honey, molasses and applesauce. Whisk until well blended and a bit “frothy”.
Mix the sifted flour with the banana egg mixture until just incorporated. Don’t over mix!
Spray a 6 muffin pan with non-stick cooking spray. Evenly distribute the batter in the muffin tin. Sprinkle crushed almonds on top. Bake for 18 minutes.
Mine didn’t rise as much as I would have liked. I’m not sure why but they came out tasty just the same! Plus each one is only about 170 calories, 2 g of fat and 4 g of fiber. If you skip the almond topping, you are looking at only 150 calories, .5 g of fat and 4 g of fiber!
Update:I made a double batch and they came out just as good! If not better in my opinion. As you can see the toddler LOVES them!

Another Update:I made them again. This time only 1/2 tsp's of the baking soda and powder and I measured out the salt. They rose up perfectly!! I have a new picture too but I don't have post right now. (recipe has been updated)

A friend of mine told me about King Arthur White Whole Wheat Flour. I haven't personally tried it yet, but instead of doing the half white/half wheat thing, she uses all White Whole Wheat flour.

Oh, that looks so healthy. Bananas are great - if they are ripe enough, they are wonderfully sweet which means you can cut way down on the sugar in your recipe (as I see you have already done).

Those muffins look so good. I know I always use a bit of salt when using baking soda, to make it rise, so maybe that is what is needed. Will be trying this when I get whole wheat flower.

Tried this recipe and turned out ok. Made up with it 9 muffins. The only drawback was that the baking soda was kind of strong tasting. Next time I'll try 1/2t baking soda and 1/2 baking powder to see how it turns out... But overall I liked it and so my 3yr. old!

This is the first time I've tried to make a banana bread with no oil that it didn't turn out PASTY! These are SO filling & perfect with coffee! (And not overly sweet like many muffins.)
I made them with the following changes:
Substituted sugar-free syrup for molasses (because I had some and I will never again try to use it to top pancakes...bleccchhh!), substituted Egg Beaters for whites (because I had some), substituted light raspberry yogurt for plain yogurt (because it was already open...you couldn't detect the raspberry flavor in the final product), and lowered the baking powder & salt to 1/2 tsp. each...PLUS I replaced half of the almond extract with vanilla (because I'm addicted to vanilla and I need to check in to rehab to help me with my problem...I could drink that stuff!!!). I also replaced 1/4 cup of wheat flour with soy flour (because it has fewer calories and more fiber!!!) I topped them off with a sprinkle of rolled oats, and let the home-baked aroma fill my house with vanilla-banana goodness! This one's a keeper...thinking about throwing in some raisins or dried cranberries next time.

I tried these today and they came out okay. The husband bought unsweetened applesauce instead of regular so I think that may have something to do with it, mainly because mine were not sweet at all. Also I used a 12 cupcake pan and got 15 cupcakes out of them and used the little papers because I can never get anything to not stick to the non-stick pans. The batter still stuck to the papers a lot, do you know of a way to prevent that? It's as though they were totally cooked but still VERY moist. Am I doing something wrong?

Swizzlepop - I used unsweetend applesauce too. It's all I use. Mine weren't sweet at all either. I didn't want them to be.
As for the sticking I just put them in the muffin pans sprayed in non-stick spray. They popped right out. You could spray the papers too!

Ok, well then if yours weren't sweet either then I did it right :). I was expecting them to be a bit sweeter so I may just add either more honey or like a 1/16th C of sugar. I tried spraying the pan with non-stick when I did the diet coke muffins and they stuck then too. It's ike RF stuff is just too moist or something. All in all not bad just not what I was expecting. Guess I'll try again when I get another ripe banana. Thanks again for posting this though, now I'm determined to make it work for me :)
I tried these the other night and thought they were great. I have been a baker for a long time and become frustrated that I can't always indulge in what I bake. I made a few changes. I used white whole wheat flour(milder taste and color same NI) I used 3/4 tsp of baking soda and powder and used 1/2 almond and 1/2 vanilla. I loved that these did not have sugar but were a little sweet but not sweet enough to keep me craving. Thanks

I made 12 muffins today and 3 hours later half of them are gone!! Yummy! I doubled the batch and they still came out tasting wonderful. I'm going to share this recipe and your site, Roni, on my blog! Thanks for all you do to treat us to yummy recipes that are good point wise too.

These were great!! So moist and i just realized that I forgot the almond extract, I can't imagine these being any better. I am going to store tomorrow to get more bananas so I can make a triple batch to freeze and have on hand for a healthy, hearty breakfast for the fam. My 3 year daughter helped make them and she, along with my 6 year loved them! Thanks!!
Just wanted to let you know you now have another "faithful reader"! I've lost about 60 pounds to reach my goal weight and am always looking for websites that have good recipes and inspiration, and I've found both in yours! I found your muffin recipe and just happened to have 3 ripe bananas in the pantry, so I doubled the batch and used all 3. They turned out wonderfully! My 4 and 2 year old daughters gobbled 1 apiece and asked for more! Thanks for all your healthy ideas - keep them coming!!
Roni you said a couple days ago that you changed these up again. I think this is the same recipe I used before. If you have made these really good muffins better please share how you did it.
P.S. I have a overripe banana sitting on my counter waiting to be used.
