Beans, Peas and Orzo

What a horrible name. I don’t even have a story for this one. I didn’t feel like cooking but I felt like eating, if that makes sense. So I threw some stuff in a pot that I would haven’t worry about and this is what came out. Beans, Peas and OrzoTo be honest, I wasn’t even go to post it but after I put it in the bowl and snapped I knew I had a pretty good picture. Yes, I know stupid reason to post a dinner idea but I liked it.

  • 1 can of diced tomatoes with liquid
  • 1 can of kidney bean drained and rinsed
  • 1 can of peas with liquid
  • About 1 tsp each garlic powder, onion powder and dehydrated onions (minced onion)
  • 4 oz uncooked Whole Wheat Orzo pasta

Literally, and I’m not kidding, I threw everything in a pot and brought it to a boil then simmered it for about 10 minutes until the pasta soaked up most of the liquid. Then I shut the heat of and let it sit for another 10. Note: stir now and then the orzo sticks to the bottom of the pot.

I served with a couple of crackers and a light sprinkle of parmesan cheese.

For Nutritional information, I’m calculating approximately 280 calories, 1 g of fat and 17 g of fiber for each of the 4 servings.
