Mojito Tilapia
A few weeks ago I caught a glimpse of cooking show on Food Network, I can’t remember which one but they were making Mojito Marinated Chicken.
I didn’t watch the show but it gave me this idea for some tilapia fillets.
The Marinade
- Juice of 1 lemon
- Juice of 2 limes
- Zest of one of the limes
- 1 tbsp honey
- About 1 tbsp fresh mint leaves chopped (save a few to garnish)
Wisk all ingredients together. That’s it!
I salted and marinated 4 fillets for about an hour. I then cooked them in a non-stick griddle sprayed with non-stick cooking spray about 3 minutes a side over medium-high heat.
For sides I served the fish with sweet potato fries and asparagus I roasted with a bit of honey and lemon slices. It complimented the fish perfectly! (I can’t believe I just said that)
As for the Nutritional Information, I’m stumped. Alright that’s a lie, I’m too lazy right now. Anytime I marinade and a majority of the marinade is left over, I only add a point for it. Especially this type which has no oil. But that’s crazy Roni logic. ;~)
OH! The husband LOVED it and the toddler ate about 20 spears of asparagus!
