Popcorn Chicken with Sweet Yogurt Dipping Sauce
This one’s for the kids. It was just the toddler and I tonight for dinner so why not have a bit of fun?
Popcorn Chicken
- 1 egg white
- 8 oz boneless chicken breast cut into thin finger like pieces
- 2-3 cups of 94% fat free microwave popcorn popped
- Non-stick cooking spray
Put the popcorn in a zip lock bag and beat the crap out of it with a rolling pin to make the “breading” for the chicken. Go ahead let the kids do it, they’ll have fun! ;~)
Dip the chicken in the egg white and roll in popcorn breading. Lay the chicken in a baking sheet sprayed with non-stick cooking spray and bake for 12-15 minutes in a preheated 400-degree oven until chicken is done.
I used 2 cups of popcorn but just barley had enough to cover so I’m saying 2-3 cups would do it for the ½ pound of chicken.
Sweet Yogurt Dipping Sauce
My toddler LOVES to dip so I thought this would go good with the popcorn chicken.
- 2 tbsp non-fat plain yogurt
- 1 tbsp honey
- 1 tbsp ketchup
- ½ tsp Worcestershire sauce
Mix all ingredients well and serve with chicken!
As for the nutritional information, this idea serves two and I’m calculating approximately 240 calories, 2 g of fat and 2 g of fiber per each.

This looks awesome!! I will jot this away for a friday evening when I feel like eating junk...crunchy chicken with sauce should do just the trick!!
