Sweet Pork Stir-fry

“Very good!” That’s what the husband said while eating this. Normally he is stingy with the comments. I usually only get a “It’s fine” or “Not bad” so take the “Very good” as picky husband approved. ;~) The toddler also said “good” on serveral occasions during dinner! So consider it a hit!Sweet Pork Stir-fry

  • 1 lb lean pork loin cut into bite size pieces
  • 1/8 cup (2 oz) orange-pineapple juice (either would work, I just happen to have a mix from a single serve we got the toddler)
  • 2 tbsp soy sauce
  • 1 tsp ground ginger
  • 1 tsp onion powder
  • ¼ cup water
  • 1 tbsp oat flour (or other thickener)
  • Large bell pepper sliced
  • Large zucchini sliced

In a large frying pan cook the pork loin and juice (no oil needed!) over medium-high heat until the pork is just about done (all white outside). Stir occasionally

While the pork is cooking, mix the soy sauce, ginger, onion powder, water and oat flour in a small bowl or coffee mug.

Add the cut up veggies to the pan; pour soy sauce mixture on top. Stir to coat, Lower the heat to medium and cover, allowing the veggies to steam a bit.

Uncover when veggies are desired tenderness. Stir and allow the sauce to thicken a bit. Serve over or along side of rice.

This made 4 nice size servings and you can always add more veggies to bulk it even more. Each serving is approximately 200 calories, 7 g of fat and 2 g of fiber not including the rice.

I just have to celebrate ~ I reached my upper goal for my height and started maintenance tonight after my weight in and meeting. YEA!!!! I need some advice, my leader wants me to add 4 points to my daily allowance, but I want to continue to loose, I'm not at my personal goal. So do I do what works for me, or listen to my leader? Will I still be considered on maintenance if I continue to loose?
Roni ~ with this great news, I have to thank you for your terrific site. It has kept ideas coming, I'm trying new veggies that I didn't even know about, and Mango too! Thank You Roni, you don't know how helpful you are. I've even decided to meet with a trainer to change up my workout routine. Can't wait to see if anyone has some advice for me in maintenance mode.

I really like the idea of cooking the pork in juice instead of oil, although my husband doesn't like anything fruity, lol. I'll have to try this, though...maybe I can sneak it past him!

I also have a great pork stir fry recipe on my Recipes page if you want to check it out...my hubby liked it a lot and I too usually just get a "it's alright" or "it's okay." Of course, he'd love cheeseburgers and fries every night of the week!!

What rice did you use for a side in that picture? It looks more like a Rice a Roni type rice and it looks yummy!

Nancy- CONGRATS Add the 4 points, it is really important to go thru the maintenance phase. Afterwards you can always go back into loss mode. You may be surprised and still lose like I did!!

For the guys who asked about the rice, I used the lipton whole grain rice side, sesame flavor....

This was really quite good! As I often do with your recipes, I altered it a bit to fit the ingredients I had on hand. Instead of green peppers and zucchini, I used pineapple chunk (plus their juice, of course), red and yellow peppers, sweet onion, and baby bok choy. Excellent, and it got accolades from the husband, too!
