Whole Grain Waffles
Well, really they are waffle shaped pancakes but SHHHhhhh the kids will never know. 
Last weekend I went to target and saw a waffle iron on sale for 8 bucks. I never had a waffle iron and waffles were not a big staple at my house growing up but I figured why not. It’s something new and fun.
So I took my Whole Grain Pancake recipe and gave it a whirl in the iron. They came out delicious! However, a waffle is supposed to be crunchier then pancakes, right? These did not come out crunchy. They were really like waffle shaped pancakes (well duh, I used pancake mix in the waffle iron). ;~)
I froze the leftovers so maybe when I toast them they will be more waffle like. In the meantime, if you are looking to change up your breakfast now you know the pancake recipe works well in the waffle iron too!
The recipe as is made 7 waffles (as pictured) each approximately 100 calories, 1 g of fat, and 3 g of fiber.

Roni- I use pancake mix in the waffle iron all the time. Let the waffles cook a little longer than you think they should. I use to make them soft like pancakes and now I left them a little longer and they turn out great.

Roni-I make waffles all the time with pancake mix. The trick to making them crispy is to thin them out with water and add a little oil. I know I know, the calories.
Hello Roni ~ have you ever tried Buckwheat? Log Cabin makes a Buckwheat mix that I was raised on. Probably not as healthy as your's but I prefer it over plain pancake mix.
I wondering if anyone has a daily servings of whole grains? I've checked in ww Eat Wisely book, it suggests whenever possible. Talked to ww, they said to talk to my leader, but just checking to see if anyone has a suggestion on daily servings minimum.

Try adding a bit of splenda to the recipe. The sugar browns and crisps the waffles a bit more than pancakes.
Nancy - I'm going to do a whole grain post. A lot of people are confused by it.
