100% Whole Wheat Pumpkin Muffins

I love getting an unexpected day off work.  Of course, I spent it experimenting in the kitchen!

The holidays are coming and I thought a simple pumpkin spice muffin would be nice.  My first take at it was pretty darn good! I think I may try other spice combinations (they need a bit more) but as for texture, size and nutritional info, I couldn’t be happier!  100% Whole Wheat Pumpkin Muffins

  • 2 cups (240 g) of Whole Wheat Flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 & ½ tsp cinnamon
  • 1 tsp ground nutmeg
  • ½ tsp ground cloves
  • ½ tsp ground ginger
  • 1 tbsp (21 g) honey
  • 1 tbsp (20 g) molasses
  • 1 egg
  • 1 egg white
  • ½ cup (4 oz) water
  • 1 can (15 oz) canned pumpkin
  • Non-stick cooking spray

Preheat the oven to 375 degrees.

Double sift all the dry ingredients, flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and ginger. Set aside.

Whisk the egg, egg white, honey, molasses, and water in a large bowl.  Mix in the pumpkin.

Add the sifted dry ingredients to the wet and stir until just mixed (you don’t see anymore dry ingredients).  Don’t over mix!

Spread the muffin batter evenly into 2 6-muffin pans sprayed with non-stick cooking spray.

Bake for approximately 18 minutes.

Makes 12 muffins, nutritionally, I’m calculating about 100 calories, 1 g of fat and 3 g of fiber for each!

By the way, I sprinkled the whole batch with about 1/2 tsp of powdered sugar just to make them prettier. It only adds about 5 calories for the whole batch.

Roni-
Have you tried the white whole wheat flour yet? I really think you would like it a lot. The brand I buy is king arthur. I do like regular ww flour but for baked goods like muffins ie your banana ones I think the white ww is a little lighter. Pumpkin is on sale this week so I am going to stock up thanks for a new recipe to try.

I love your banana muffins, so I am looking forward to trying these. One tip that works for me... I beat my egg whites (like meringue) before I add them to the other ingredients. When you're working with all or mostly whole wheat flour, it helps to make the muffins a bit lighter!

Anonymous - These came out similiar. I know what you mean about the egg white too. that why I say whisk them. It definitely helps!

So I don't want everyone to get their hopes up. They are good but may need a little work in the spice department, like I said. Can you tell I get nervous when people are going to try my ideas? lol

Are these sweeter than the banana muffins? I may try them tonight since I actually have all the ingredients on hand which is surprising. I think I may add a hind of vanilla too though. I wish baking was like cooking where you could just go by color and smell ( that is how I season most foods LOL). They look delish and I can't wait to see your cookbook!!!!! I hope us bloggers will get a sneak preview to buy ;).

Swizzlepop - nope not sweet at all. I don't like my muffins too sweet. My next muffin will be, just for you! ;~) Oh and I also wish baking was more like cooking. I'm a by site and taste cook as well.

Cairogal - Freeze them right away! That's what I do.

As for the cookbook, I'm working on it. First a new site where I will publish my polished recipes, then I'll pitch that to publishers. That's my plan anyway. It could take YEARS!! lol

Thanks so much for the recipe. My daughters been wanting to making a pumpkin pie ever since we went to the pumpkin patch but I think this will make a nice (& heathly) alternative.

as soon as I saw this recipe, I made them right away. The only thing I did different, was added a bit of splenda and I used a half cup of fat free skim milk instead of water. Oh yeah, I added a ton more cinnamon and I also added pumpkin spice. They turned out great! Thanks for the inspiration...

I made these today and they are delicious. I did add some splenda to sweeten them up since I do like my muffins on the sweeter side.

And I'm with Rebecca in being a fan of the King Arthur white whole wheat flour. It's still whole grain but works really well in baking because it comes out lighter.

Can't wait to try these.

When the page first loaded, i thought that was some sort of ground meat patty covered in sauce. The details that I focused on changed my perspective drastically. :)

They are exactly 1.5 so you can count that or round up or down. lol I guess it depends on the kind of point counter you are.

Made these last night and they were fantastic. I added a sprinkling of Chocolate Chips so Hubby would not be too put off by the "healthy-ness" and they were devoured. Thanks so much!
