Cobbler-ish Blue Bran Peach Tarts?

Alight, so I have no idea what to call this but it sure was good!

I used fresh peaches (left the skin on) but I like them to stay firm. If you want a “mushier” more cooked peach, you may want to blanch them or use canned.

  • 1 package BlueBran VitaMix (Blueberry Bran Muffin Mix) (Click here to purchase)
  • 4 fresh peaches (canned would work too)
  • 2 egg whites
  • 1 ½ cup of water
  • Cinnamon

Preheat the oven to 400 degrees.

Put 2-3 peach sliced in the bottom of 12 tart pans.

Make Blue Bran mix according to package.

Pour the batter evenly over the peaches, sprinkle with cinnamon and bake for 20-25 minutes

Each “cobbler-ish tart” is about 125 calories, 2 g of fat and 7 g of fiber.

so how will you store all of your tarts? If in the freezer how do ensure they won't get freezer burn. Can you tell Im a novice. ;)

yup, I froze 1/2 of them. I put them in individual baggies and took out as much air as I can.

It's the first time I made them so I'm not sure how they will defrost. I'll post an update when I hit my frozen stash.
