Delicata Steak Fries
I may be nuts, but all I needed was a little salt and ketchup. I ate the whole squash myself! It was delish!
- 1 Delicata Squash
- Non-stick cooking spray
- Salt
Preheat the oven to 425 degrees.
Cut the squash in half lengthwise and clean out the seeds with a spoon. Cut into long steak fry chunks leaving the skin in tact.
Spray a cookie sheet lined with aluminum foil with non-stick cooking spray. Layout the squash fries, spray with a bit more non-stick cooking spray and sprinkle with salt.
Bake for about 40 minutes turning once.

Does this squash count for any points? --You look great. Thanks for the inspiration!
woops I totally forgot nutritional info. I'd count it as a point a serving. I think the whole squash is about 170 calories, 0 fat and 9 g of fiber.
I bought 2 of these for tonight to eat with laughing cow cheese stuffed burgers...yum
I just made these for an afternoon snack, I added a little garlic powder and paprika, they were incredible!
Roni, can't wait to try these. I may make burgers tomorrow night just to make these. I have a delicata in my pantry. Just tried them last year for the 1st time, usually bake them with olive oil and fresh garlic.
Roni, these rock! Wish I could get them year round. Hubby loved them too!!! Thanks!!
The worst part is cutting these delicatas. But they were very good. I ate the whole squash, minus a bite here and there by my 19 month old grandson. He seemed to like them too.
