Halloween Brownie Bites

Ok, so I’m cheating. This isn’t really a recipe, just a festive way to use a mix. I found Halloween colored sprinkles at the grocery store and thought this would be cute.

Alright, alright, so maybe it’s just a reason to post a picture of the toddler. ;~)

Now, I actually envisioned smaller bites but I only had 1 min-muffin pan. There was more then enough mix to make 48 bites.

Prepare brownie mix according to package. Evenly distribute in 24 cup mini-muffin pan. Sprinkle with jimmies.

Bake for about 23 minutes in a preheated 375 degree oven.

As prepared, each bite is about 50 calories, less then a g of fat and 3.5 g of fiber! That’s half of what a VitaBrownie is. If you make 48 cut the nutritional info in half again! I don’t know about you but I’d rather eat 4 bites then one brownie, even though it’s the same amount. Call me simple but it’s easy to trick this mind into thinking it’s eating more. ;~)

Can I purchase these vita mixes in the store??
Also, what is the nutritional value, I didn't see it on their website. How are they different than other brands?
We made cupcakes yesterday! UGH!!!

Roni, Thank you for sharing all your ideas. I do not know if you have shared this product but I just discovered them. The are called Flat Out Wraps. They are soft and so much better for sandwichs than tortilla wraps. The Mulit Grain has 100 calories and 8 g. of fiber the Italian Herb 90 calories and 9 g of fiber. Both only one point and they are huge. I just found them at my grocery store and I lover the. Here is a website if you are not familiar. Thanks again for sharing. www.flatoutbreadcom

Hi Roni, I'm a daily visitor to your site, and a huge fan of your healthy, delicious recipes. I had a question--do your VitaMuffin experiments defrost well? I noticed you often freeze your individual "treats" for later and I wanted to make these ahead of time for a Halloween party and freeze them, but I'm unsure of how they will taste. Thanks!

Anonymous - They do. The only time I had a problem was when I left them in the freezer for a few months.
