Supermoist Banana Pumpkin Mini-Loafs

This experiment came so moist I was shocked the loaves stayed together!

The holidays are coming (AACK!) and I like to bake healthy things to bring as I make my family visits. My mom always makes mini-loafs of her favorite holiday breads so I thought I’d give it a try. You can freeze them individually and bring them out when you have company or wrap them as small gifts.Supermoist Banana Pumpkin Mini-Loafs

Preheat oven to 400 degrees.

In a large bowl mix the pumpkin, pumpkin spice, egg whites and water. Add the package of VitaMix and blend until just moistened.

Evenly spread the mixture across 4 mini loaf pans sprayed with non-stick cooking spray (I used 3in x 5 in disposable I got at the grocery store).

In a small bowl, blend the quick oats and cinnamon to make a topping. Sprinkle over loafs.

Bake loafs for about 40-45 minutes. A toothpick inserted will come out clean when finished.

Each mini-loaf contains 3 servings. Each serving is approximately 110 calories, 2.5 g of fat and 6 g of fiber

Is there another mix I could use for this recipe, I am allergic to bananas but I would love to make a pumpkin loaf:) they look delicious!

I have tried the banaana mix and adding the pumpkin sounds delish !!!! I love pumpkin bread. Another pat on your back Roni. How do you come up with the ideas ?

anon 1 - this was my first experiment. I'll post some more as I prepare for the holidays! I'm going to try a home made whole wheat recipe in the next few weeks.

anon 2 - I really don't know, I just like to try different things I see or hear about and see how they come out. It's sounds cheesy but it's just a way I express my creativity.

Speaking of the dreaded Holidays....I have been on plan since June and am so stinkin proud of myself for ever sticking to something so long and having such disipline over what I eat. I am terrified of caving when I see the sweet potato casserole on the table....not to mention pumpkin pie and the southern tradition...Turkey and Dressing! Do you make your own "point friendly" version of Thanksgiving and Christmas Dinners? If so, would you ever consider putting a special section up with Holiday ideas? Gosh, we don't depend on you very much do we???? :-)

Ok here's another GREAT WW recipe.. similar but a bit simpler and SUPER YUMMY!!!
1 box spice cake mix
1 small can pumpkin
2/3 c water
1 tub cool whip (FF or low cal or regular)

Follow instructions on box for cook time, temp, etc...

Mix spice cake, with pumpkin and water. Put in pan and bake according to box directions. Top with Cool Whip once completely cooled. YUMMY!!! I think 2-3 points per piece and well worth it!

I don't see why not. I just happen to have quick oats on hand. Honestly I just used it too look pretty. :~)
